Moreover, it was traditionally used as an antiseptic balm on open wounds. Notably, it was a multifaceted resource for the Aztecs, utilized for both food and dye (Diaz-Bolio, 1988).
In its raw form, Acacia gum, otherwise known as Arabin, is a brittle, odorless, and tasteless material. It is the calcium salt of Arabic acid, a polysaccharide predominantly constructed from D-galactose (Mazumder et al., 2005). It has a substantial molecular weight ranging from 200,000 to 600,000 Daltons. Its water-soluble characteristic, in contrast to its insolubility in alcohol, renders it an instrumental ingredient in today’s health foods due to its soluble fiber content and its mucilaginous properties (Mounjouenpou et al., 2018).
This versatile hydrocolloid, Acacia gum, is a widely used emulsifier, extensively applied in the production of beverage and flavor emulsions as well as meal replacements. Its low viscosity, coupled with its adhesive properties, also makes it a desirable ingredient for confectionery and coatings (Singh et al., 2013).

Its complex structure is still not entirely known. Its backbone chain consists of D-galactose units, and its side chains are composed of D-glucuronic acid units with l-rhamnose or l-arabinose as end units.
